Production area: Province of Treviso and Belluno.
Harvest: Middle September.

Vinification
White-wine vinification, with soft pressing and a maximum yield of 70%.

Primary fermentation
Controlled temperature.

Battonage during storage
Full decanting three times.

Secondary fermentation (prise de mousse)
Charmat method.

Total acidity
5,50 g/l

Residual sugar
6 g/l

ON THE TABLE

Organoleptic characteristics
Its color is light straw yellow, with shades of green.

The nose reveals slightly citrus, pear, yellow fruits
and fl owers. Balsamic note of star anise follows.
The sip is dry on the palate with a savory fi nish.

Storage
Store the bottle vertically in a cool place.

Serving temperature
6-8°C.

Pairing
We recommend serving NUMERO6 as an aperitif or paired with risotto with shrimp and zucchini.
